This Straight Sour Beer showcases the elegant complexity derived from thirty-six months of barrel maturation and mixed fermentation. A sharp, lemony lactic acidity leads the sensory profile, harmonizing with a delicate, biscuity malt backbone. The extended wood aging imparts a faint structural depth and subtle vanillin, though the primary focus remains a refreshing, tart fruitiness reminiscent of green apples and citrus zest. Despite its long residency in oak, the character remains bright and vibrant, favoring a crisp, clean acidity over heavy funk. It is a sophisticated expression of patience, balancing assertive sourness with a nuanced, bready foundation and a bone-dry finish.
Appearance. Pale straw (3 SRM) with a slight hazy luminescence. It pours with a large, dense white head that displays poor retention, typical of the style, accompanied by steady effervescence.
Aroma. High intensity of sharp lactic sourness dominates the nose, layered with secondary notes of tart apple and lemon peel. The malt character is subtle but present, providing a background of crackery and bready notes. Fermentation is clean and acidic, with very low esters and a faint, woody oak presence derived from the three-year aging process.
Taste. An immediate, clean lactic sourness takes center stage, supported by a light bready and grainy malt flavor. The balance is heavily shifted toward the acidic side, featuring citrusy fruit flavors and a tart, puckering quality. There is no detectable hop flavor or bitterness. The finish is off-dry to very dry and exceptionally refreshing, leaving a lingering lemony impression.
Mouthfeel. Light-bodied with a crisp, sharp acidity that defines the texture. Carbonation is moderate to high, enhancing the refreshing and lively quality on the palate. There is no perceived alcohol warmth, and the mouthfeel remains lean without any astringency.
