Imperial IPA 8.5 º
This Double IPA delivers a concentrated sensory experience built on a foundational trio of classic American hops. Cascade, Chinook, and Columbus unite to produce an intense profile defined by resinous pine, aggressive grapefruit, and a pungent, spicy dankness. At 8.5% ABV, the beer maintains a high level of drinkability, using a clean, lean malt base to support the massive hop load without adding distracting sweetness. The Cascade hops lend a subtle floral brightness, while the Chinook and Columbus drive the deep, resinous, and herbal character that lingers long into the dry, bitter finish. It is a bold, citrus-forward, and classically bitter ale.
Appearance. Gold to light orange-copper (7-10 SRM) with good clarity, though a slight hop haze is acceptable. Features a moderate-sized, persistent, off-white head with excellent lacing.
Aroma. High intensity hop aroma dominated by pine, resin, and citrus (grapefruit). Supporting notes of black pepper and herbal spice are present. Malt is neutral and grainy in the background, with a clean fermentation profile and a hint of smooth alcohol.
Taste. Strong hop flavors of grapefruit, pine needles, and resinous spice. Very high bitterness that is firm but not harsh. Malt flavor is low and unobtrusive, providing a soft, grainy-sweet platform. The finish is dry to medium-dry with a lingering, clean, hoppy aftertaste. Low esters.
Mouthfeel. Medium body with a smooth, oily texture. Medium-high carbonation. Noticeable but well-integrated alcohol warmth is present, without any harsh hop-derived astringency.
