This vibrant Wild Ale showcases the synergy between expressive Brettanomyces and a generous addition of locally-picked fresh raspberries. The visual presentation is striking, featuring a deep rose hue and a delicate pink foam. On the nose, the beer bursts with juicy berry tartness, complemented by layers of Brett funk including sun-dried hay and subtle earthy notes. The palate is dominated by the primary flavor of fresh raspberries, supported by a bone-dry, attenuated finish and a light non-lactic acidity. This refined fermentation profile offers a crisp, effervescent mouthfeel that perfectly balances the fruit’s natural aromatic sweetness with a clean, wild complexity.
Appearance. Vibrant deep pink to reddish-rose hue; hazy to opaque from fruit solids; persistent, fine-beaded light pink head with moderate lacing.
Aroma. High intensity; dominant fresh raspberry aroma with jammy and seedy notes. Moderate Brettanomyces character presents as wet hay, stone fruit, and a hint of barnyard funk. Very low malt presence, allowing fruity esters and wild yeast complexity to lead.
Taste. Initial impression is a bright, tart burst of raspberry flavor. Mid-palate reveals a dry, highly attenuated malt backbone with subtle cracker notes. Hop bitterness is low, allowing the natural acidity of the fruit and Brett to provide balance. The finish is very dry and crisp with a lingering berry skin and slight mineral aftertaste.
Mouthfeel. Medium-light body; high carbonation providing a spritzy, refreshing character. Subtle alcohol warmth. Very low astringency despite the heavy fruit addition; clean and effervescent.
