Still We Brew is a vibrant American Pale Ale featuring the Pink Boots hop blend of Ekuanot, Centennial, HBC 638, and Mosaic. At 4.8% ABV, this collaboration offers a nuanced sensory experience, opening with a bright bouquet of papaya, lime, and floral pine. On the palate, Mosaic drives notes of ripe berry and tropical fruit, while Centennial provides a classic citrus edge. HBC 638 and Ekuanot add complex layers of melon and herbal spice. This ale is defined by its clean, bready malt backbone and a crisp finish, balancing modern hop intensity with high drinkability and a refreshing, lingering bitterness.
Appearance. Pale golden (approximately 5-6 SRM) with a moderately large, frothy white head that exhibits good retention and light lacing; clarity is generally clear to slightly hazy.
Aroma. Moderately high hop intensity characterized by tropical fruit, citrus zest, and floral-pine notes from the specialized hop blend; supported by low, neutral, grainy-bready maltiness and a clean fermentation profile.
Taste. Initial hop-forward impression of citrus and melon followed by moderate bitterness; Mosaic and Ekuanot lend berry and tropical flavors that are well-balanced by a light, biscuity malt spine. The finish is medium-dry and clean, with a refreshing and slightly resinous aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation; smooth and crisp mouthfeel without astringency or harshness, showing very low alcohol warmth.
