Shimmers is a vibrant Double IPA that showcases a sophisticated hop profile featuring Citra, Sabro, Idaho 7, and Motueka. The sensory experience begins with a burst of tropical complexity, where Motueka’s bright lime zest meets Sabro’s distinct coconut and cream character. Underlying notes of passion fruit from Citra and resinous pine from Idaho 7 add layers of aromatic depth. The palate delivers a clean, lean malt presence that supports intense fruit saturation without becoming heavy or cloying. A firm, integrated bitterness provides a crisp counterpoint to the lush fruit flavors, leading to a dry, refreshing finish that emphasizes hop purity and high drinkability.
Appearance. Deep gold to light orange (6-8 SRM). Features a moderate-sized, persistent white head with excellent lacing. Clarity is mostly clear, though a very faint, modern hop haze is present.
Aroma. High intensity hop aroma dominated by tropical fruit (pineapple, mango), citrus (lime, grapefruit), and a unique coconut creaminess. Background notes of pine resin and stone fruit. Malt is very low and neutral, providing a light grainy-sweet foundation. Fermentation is clean with very subtle fruity esters.
Taste. Initial impression is a wave of hop-derived lime, apricot, and coconut. Malt flavor is low and soft, offering a bready, supportive role without sweetness. Bitterness is moderately high and firm but smooth, lacking any harshness. The fermentation character is neutral, allowing the complex hop oils to dominate. The finish is dry with a lingering citrus and resinous aftertaste.
Mouthfeel. Medium body with a smooth, soft texture. Carbonation is moderate-high, providing a lively prickle on the tongue. There is a restrained, smooth alcohol warmth appropriate for the strength, with no hop-derived astringency.
