Rising Tide is an opulent Imperial Stout that navigates a complex intersection of deep roasting and spirit-forward barrel character. The influence of American Rye Barrels imparts a distinctive peppery spice and charred oak depth that cuts through the base beer's velvet-like viscosity. Pure vanilla additions soften the intense espresso and bittersweet chocolate profile, lending a marshmallow-like sweetness to the mid-palate. Notes of black currant and dried fig emerge alongside a significant, well-integrated alcohol warmth, while the rye wood contributes a lingering, dry tannic structure to the decadent and warming finish.

Appearance. Jet black and completely opaque (40 SRM). A persistent, dense head of deep tan foam leaves thick lacing on the glass, while high viscosity is evident through visible legs.

Aroma. High intensity with a multifaceted blend of dark chocolate, roasted coffee beans, and fragrant vanilla bean. The American Rye Barrel aging introduces layers of spicy rye grain, toasted oak, and a hint of coconut, supported by moderate esters of raisins and prunes.

Taste. Rich initial impression of bittersweet cocoa and charred grain, followed by spicy rye whiskey notes and smooth vanilla. Hop bitterness is firm and supportive. Dark fruit complexity of black cherries and figs melds with toasted oak tannins in a long, warming finish with a lingering roast.

Mouthfeel. Full-bodied and exceptionally viscous with a chewy, luscious, and velvety texture. Carbonation is moderate-low. A smooth, prominent alcohol warmth is present but well-integrated.
