Respite is a delicate, session-strength Saison that emphasizes a complex botanical profile over a light, rustic malt base. The aroma is dominated by vibrant citrus notes of calamansi and lemon peel, interwoven with the unique, numbing spiciness of sansho pepper and the herbal citrus of coriander. On the palate, it is exceptionally dry and effervescent, showcasing a sharp, peppery yeast character and a refreshing zesty snap from the fruit additions. Subtle grainy malt provides a foundation for the firm bitterness and floral hop notes, culminating in a crisp, clean finish. This low-alcohol farmhouse ale offers an intricate balance of bright fruit and earthy spice.
Appearance. Straw to pale gold (4-5 SRM). Unfiltered and hazy with an effervescent character. Topped by a long-lasting, dense, rocky white head that leaves significant lacing.
Aroma. High intensity with a complex blend of citrusy calamansi, lemon peel, and the distinct, lemony-peppercorn notes of sansho pepper. Moderate fruity esters of pear and apple are complemented by a spicy coriander note and low, earthy, continental hop character. Grainy malt is very low.
Taste. Initial impression is bone-dry and crisp. Flavors of zesty lemon and tart calamansi lead into a mid-palate of peppery yeast esters and a savory, spicy bite from the sansho pepper. Hop flavor is low and floral. Malt is low and cracker-like. High attenuation leads to a very dry, bitter, and spicy finish with a clean aftertaste.
Mouthfeel. Light body with no alcohol warmth. Very high carbonation providing an effervescent, prickly sensation on the tongue. Crisp and refreshing with no lingering sweetness or astringency.
