This Wild Specialty Beer presents a striking intersection of high-gravity hop saturation and refreshing acidity. The hop profile, driven by Vista, Eclipse, and Cashmere, erupts with concentrated notes of sweet mandarin, zesty lime, and ripe stone fruit. A clean lactic sourness cuts through the malt weight, elevating the floral and melon-like aromatics of the Vista hops. Cashmere adds a smooth, coconut-tinged complexity, while Eclipse provides a sharp citrus backbone. Appearance. Deep gold color (6 SRM). Features a persistent white head with moderate lacing. Displays a significant, uniform haze characteristic of a modern high-gravity hop-forward base.
Aroma. High aromatic intensity. Leading with sweet mandarin and resinous pine from the Eclipse hops, followed by a cocktail of lime and melon from Cashmere. The Vista hops contribute honeyed peach and floral esters. A distinct but clean lactic acidity provides a sharp, bright counterpoint to the fruity hop character.
Taste. Initial impression is a sharp, refreshing tartness. Powerful flavors of tropical fruit and citrus zest dominate the mid-palate, specifically peach and lime. The hop bitterness is low to moderate, overshadowed by the acidic profile. Malt flavor is low, providing just enough cracker-like support before a very dry, acidic, and lingering citrus finish.
Mouthfeel. Medium body with a slightly creamy texture that is lightened by the acidity. Moderate to high carbonation provides a prickly sensation. A light, well-integrated alcohol warmth is present without being harsh.
