Phase Shifter is a vibrant Double IPA that showcases a sophisticated and modern hop profile. The use of Citra brings sharp grapefruit and lime zest to the forefront, while El Dorado layers in sweet pineapple and ripe stone fruit. Unique contributions from Sabro introduce a creamy coconut and subtle tropical woodiness, elevating the aromatic complexity. Despite its 8% strength, the body remains medium-light to ensure high drinkability. A firm, clean bitterness balances the neutral, grainy malt backbone, leading to a crisp, dry finish where lingering citrus and resinous notes persist. The result is an intensely hoppy experience that remains remarkably smooth.
Appearance. Pale gold to light orange-copper (6-9 SRM). Brilliant clarity with a slight, modern haze. Topped with a moderate-sized, persistent, white head that leaves fine lacing on the glass.
Aroma. High aromatic intensity dominated by tropical fruit (pineapple, mango) and citrus (grapefruit). Distinctive secondary notes of coconut and cream from Sabro. Low, clean, grainy maltiness provides a neutral background. Fermentation esters are low and fruity; alcohol is soft and well-integrated.
Taste. Initial impact of tropical and stone fruit flavors followed by resinous citrus. Pronounced hop bitterness is firm but smooth, lacking harshness or vegetal character. Clean, neutral malt provides a soft, unobtrusive base for the hops. The finish is dry to medium-dry with a lingering aftertaste of lime zest and pine. Low fruitiness from fermentation is clean and supportive.
Mouthfeel. Medium body with a smooth texture. Medium-high carbonation provides a lively, crisp sensation. Noticeable but restrained alcohol warmth is present, offering a pleasant glow without heat or solvent notes. No hop-derived astringency.
