Imperial IPA 8 º
Pathways is an assertive Double IPA that showcases a sophisticated blend of Idaho 7, Azacca, Centennial, and Mosaic hops. The sensory experience begins with an explosion of pine from Idaho 7, ripe mango from Azacca, and zesty grapefruit driven by Centennial, complemented by the nuanced berry and stone fruit notes of Mosaic. As a modern West Coast interpretation, it prioritizes a clean, neutral malt profile that allows the hop saturation to take center stage without being obscured by heavy sweetness. The palate is defined by a firm, resinous bitterness and a remarkably dry finish, while the 8% ABV provides a refined, well-integrated warmth that enhances the beer's lean, punchy character.
Appearance. Deep gold to light copper color (SRM 7-9) with brilliant clarity. Pours with a moderate-sized, persistent, creamy white head that exhibits excellent retention and leaves thick decorative lacing.
Aroma. High intensity hop aroma dominated by resinous pine, tropical mango, and bright citrus zest. Subtle floral notes and hints of dark berry emerge as the beer breathes. Malt character is low and neutral, providing a clean, slightly grainy backdrop without any caramel sweetness. Fermentation is very clean with no notable esters.
Taste. Initial impression is a powerful wave of tropical fruit and citrus oils. A moderately high bitterness follows immediately, providing a firm and resinous structure that never becomes harsh. Hop flavors of grapefruit rind, pine needles, and stone fruit persist throughout. The malt is soft and unobtrusive, supporting the hops with a light cracker-like flavor. Finishes very dry with a long, lingering hop-derived bitterness.
Mouthfeel. Medium-light to medium body with a smooth, crisp texture. Carbonation is medium-high, adding a lively prickle to the tongue. A gentle, well-integrated alcohol warmth is present but restrained, and there is no hop-derived astringency.
