High & Mighty presents as a formidable Double IPA, balancing high-impact hop saturation with surprising drinkability. The sensory profile is dominated by the synergistic pairing of Citra BBC and Cashmere, delivering layers of ripe mango, bright tangerine, and a distinct lemon-lime herbal nuance. A clean, neutral malt base provides a lean platform, allowing the hop intensity to remain the focus without the distraction of heavy caramel. Appearance. Deep gold to pale orange (7-9 SRM). Pours with a moderate-sized, persistent off-white head with excellent lacing. Clarity is good, though a very faint hop haze is acceptable for the style.
Aroma. High intensity hop aroma characterized by notes of grapefruit, mango, and tropical citrus from the Citra BBC, alongside melon and a soft herbal, lemon-lime touch from the Cashmere. Malt is low and neutral, providing a light crackery background. Fermentation is clean with very low fruity esters.
Taste. Initial impression is a burst of citrus and tropical fruit hops. The flavor profile follows the aroma with prominent grapefruit and melon. Malt flavor is low, supporting the hops with a clean, grainy character. Bitterness is high but smooth, lacking harshness. The finish is dry to medium-dry with a lingering resinous and fruity aftertaste. Alcohol is present but clean.
Mouthfeel. Medium body with a smooth, almost creamy texture. Carbonation is moderate to high. A light, pleasant alcohol warmth is present but well-integrated. No hop-derived astringency is perceived.
