This luminous Wild Specialty Beer offers an exquisite fusion of sharp, lactic acidity and modern hop saturation. Vibrant aromas of tropical stone fruit from Rakau and apricot-forward Idaho 7 lift from the glass, joined by the distinct coconut creaminess of Sabro and soft, sweet melon notes from Cashmere. On the palate, a brisk, clean sourness structures the beer, slicing through the juicy, fruit-forward hop profile. The mouthfeel is remarkably soft yet effervescent, carrying a light sweetness that quickly dries out into a refreshing, slightly herbaceous finish where the unique synergy of wild fermentation and intense dry-hopping truly shines.
Appearance. Hazy, pale yellow-gold with a fluffy, white head of moderate retention and delicate lacing.
Aroma. High intensity aroma of ripe apricot, mango, and coconut, combined with candied lime, backed by a clean, sharp lactic sourness and light, rustic wild yeast esters.
Taste. Bright lactic sourness immediately upfront, quickly followed by intense tropical flavors of peach, passionfruit, coconut, and lemon-lime. Hop bitterness is very low, balancing the soft, bready malt. Finishes extremely dry, tart, and crisp with lingering tropical fruit notes.
Mouthfeel. Medium-light body with a soft, pillowy texture, lively moderate-to-high carbonation, and a mild, clean, mouthwatering acidity with no harshness or heavy alcohol warmth.
