Embers is a vibrant Wild Specialty Beer that showcases a lush harvest of stone fruits. The aroma is dominated by ripe nectarine and velvet peach, supported by the subtle, jammy depth of apricot. A dusting of cinnamon provides a warm, earthy counterpoint to the bright, lactic acidity characteristic of the style. On the palate, the tartness is snappy yet balanced, allowing the stone fruit flavors to bloom before finishing with a delicate, spicy dryness. Appearance. Hazy, golden-orange to deep apricot hue (SRM 6-9). Moderate white head with fair retention; may show a slight orange tint. Fine lacing.
Aroma. High intensity. Pronounced aromas of fresh nectarine and fuzzy peach skins. Secondary notes of apricot jam and a distinct, warm cinnamon spiciness. Low crackery malt character. Clean lactic sourness with very low earthy funk.
Taste. Initial sharp tartness of lactic acid. Rich flavors of peach and nectarine juice dominate the mid-palate. Apricot adds a tangy, slightly floral depth. Negligible hop bitterness. Cinnamon offers a woody, spicy finish that lingers. Dry, crisp aftertaste with minimal residual sweetness.
Mouthfeel. Medium-light body. Moderate to high carbonation provides a prickly, refreshing sensation. Very light alcohol warmth from the 6.5% ABV. Slight astringency from fruit skins and cinnamon.
