alea Immanence is an elegant Saison aged in neutral oak foudres, presenting a rustic yet refined profile. The sensory experience is defined by a bright, lemony acidity that intertwines with soft wood tannins derived from the extended maturation in foudres. This wood aging brings a gentle earthy complexity to the traditional fruity and spicy yeast profile. Its palate is a deliberate balance of moderate bitterness and a subtle lactic tang, reflecting its farmhouse roots. The finish is remarkably dry, showcasing high attenuation, while the oak provides a structural backbone that lingers with a clean, citric embrace.
Appearance. Pale gold (6 SRM) with a slight haze; features a long-lasting, dense, rocky white head that leaves persistent Belgian lace. Highly effervescent.
Aroma. Moderate to high intensity featuring lemon zest, cracked white pepper, and a subtle dusty, earthy oak character. Low grainy malt sweetness is overshadowed by fruity esters of pear and citrus, with a faint, pleasant lactic tartness.
Taste. Initial impression is bone dry and crisp, dominated by lemon and pome fruit esters. A soft, grainy malt backbone supports a balanced interplay of medium hop bitterness and a refreshing acidity. Neutral oak tannins add structure without overt woodiness. The finish is very dry and slightly spicy, with a lingering citric aftertaste.
Mouthfeel. Medium-light body with very high carbonation, creating a prickly, effervescent sensation. A light tannic astringency from the oak adds grip, while the 6.3% ABV provides a very subtle, well-integrated warmth.
