Aldarra Mestiza is a traditional Weissbier that showcases a rustic, unfiltered character. Crafted from a blend of barley and wheat, this Hefeweizen displays a deeper, more turbid hue than typical examples, reflecting its raw, artisanal nature. The sensory experience is led by a moderately fruity profile, where the signature yeast-driven notes of ripe banana take center stage. These esters are expertly balanced by the spicy phenolic bite of clove, creating a complex yet refreshing bouquet. The influence of the wheat grist provides a soft, bready backbone, culminating in an effervescent and highly drinkable finish true to the style's German roots.

Appearance. Deep gold to light amber in color (SRM 5-8); significantly turbid and hazy from yeast suspension and wheat proteins. Features a thick, moussy, long-lasting white head with dense lacing.

Aroma. Moderate to high intensity; dominant esters of ripe banana paired with spicy phenols reminiscent of clove. Low bready, doughy wheat malt aroma in the background with no hop aroma or diacetyl present.

Taste. Initial impression of soft, bready malt followed by prominent banana and spicy clove flavors. Bitterness is very low, allowing the yeast character to lead. The balance is slightly toward the yeast and malt, finishing relatively dry and clean with a lingering spicy aftertaste.

Mouthfeel. Medium-light to medium body; fluffy and creamy fullness that remains refreshing. High carbonation provides a spritzy, effervescent feel with no astringency or alcohol warmth.
