This Saison presents a striking ruby hue and a complex sensory profile shaped by the addition of red corn and hibiscus. The aroma is dominated by a pleasant mix of fruity-spicy yeast, offering distinct notes of peach and plum alongside a floral, tart lift from the hibiscus. On the palate, a soft caramel malt presence is quickly overtaken by a rustic, grainy character from the red corn and a firm hop bitterness. True to its style, it finishes exceptionally dry and effervescent. At 7% ABV, it provides a well-integrated warmth that supports the intense stone fruit esters and floral nuances.
Appearance. A deep ruby to copper-red color (approx. 14-16 SRM) with a dense, long-lasting ivory head that shows light pinkish tints. Clarity is slightly hazy due to the use of red corn and hibiscus additions.
Aroma. High intensity with a complex blend of spicy black pepper phenols and rich stone fruit esters like peach and plum. A light, grainy malt sweetness is present, complemented by the floral and slightly acidic scent of hibiscus and low earthy hop notes.
Taste. Initial impressions of stone fruits and floral hibiscus transition into a grainy, rustic malt center with subtle caramel notes. Hop bitterness is moderate to high, which, combined with the very high attenuation, creates a clean, very dry finish. The mid-palate features spicy yeast character and a lingering, floral aftertaste.
Mouthfeel. Medium body with very high, effervescent carbonation. A light, pleasant alcohol warmth is noticeable, with a smooth mouthfeel contributed by the cereal grain additions.
