This Wild Specialty Beer artfully translates the elegance of a French éclair into a vibrant, wild-fermented profile. The experience is centered on a playful tension between sharp lactic acidity and the lush, jammy essence of ripe strawberry. Nuances of white chocolate emerge as a soft, vanillin sweetness, mimicking a decadent fondant topping. While the wild fermentation provides a rustic, slightly funky backdrop, the focus remains on the pastry-inspired components. The result is a sophisticated interplay of tart fruit and creamy confectionery notes, delivering a contemporary interpretation of a classic dessert within a bright, acidic framework.
Appearance. Pours a hazy, rose-gold to light ruby hue (8–12 SRM) depending on the fruit concentration. Features a fine-beaded, off-white head with moderate to low retention, often dissipating quickly due to the acidic environment, leaving light lacing.
Aroma. High intensity aromatics of fresh, macerated strawberry dominate, supported by a distinct lactic tartness. Subtle notes of vanilla bean and cocoa butter from the white chocolate provide a sweet, creamy counterpoint. Very low earthy funk and no detectable hop aroma.
Taste. The initial impression is sharply tart and refreshing, immediately followed by an explosion of strawberry flavor. A mid-palette sweetness suggests white chocolate and cream, softening the acidic bite. Hop bitterness is negligible (below 10 IBU), allowing the fruit and fermentation character to lead. The finish is remarkably clean and dry, yet it leaves a lingering, sweet-tart fruit aftertaste.
Mouthfeel. Medium body, which is slightly fuller than a typical wild ale due to the creamy pastry components. Carbonation is moderate-high, providing a lively, scrubbing effervescence that balances the richness. No alcohol warmth is perceived at 5.5% ABV; the texture is notably smooth and slightly creamy.
