At a sessionable 3.5% ABV, it presents a bright pineapple sweetness that complements the characteristic lactic tartness of the style. The inclusion of rosemary introduces a sophisticated, resinous pine note and woody depth, grounding the high-toned fruit acidity. Underlying these layers, the traditional Gose profile remains intact, offering a delicate saline lick and soft, doughy wheat malt. Appearance. Pale yellow (3-4 SRM) with a persistent, moderate to full haze. Rises with a tall, white, effervescent head that shows tight bubbles and good retention.
Aroma. Moderate-high intensity featuring bright tropical pineapple and distinct resinous, piney rosemary. A clean lactic sourness provides a sharp edge, while soft, bready wheat malt forms the base. Subtle notes of citrusy coriander and a faint hint of sea spray are present.
Taste. Initial impression is a tart, mouthwatering acidity followed quickly by juicy pineapple flavor. The mid-palate reveals savory, herbal rosemary and a light, doughy malt sweetness. Salt character is noticeable but restrained, enhancing the pineapple's vibrancy. Bitterness is very low, allowing the acidity and herbal notes to drive a crisp, dry finish.
Mouthfeel. Medium-light body with very high carbonation and a lively, effervescent sting. No alcohol warmth is perceived. The salt provides a slight tingly, mouthwatering quality that rounds out the acidic sharpness without adding weight.
