This reimagined Gose presents a bold, savory profile inspired by the Mexican Michelada. The sensory journey is dominated by the vibrant acidity of fresh lime juice and the umami richness of tomato, creating a robust, savory base. Warmth from chili pepper provides a lingering, spicy tingle that complements the traditional Gose foundations of sea salt and crushed coriander. Despite the elevated 6.5% ABV, the beer maintains a refreshing character through its sharp lactic tartness. The interplay between salt, heat, and citrus makes for an unconventional yet harmonious experience, where the wheat-driven malt provides just enough structure to support the intense botanical and vegetable additions.

Appearance. Hazy, reddish-orange to deep tomato-juice hue (10–14 SRM) with a thick, off-white to pale pink head that shows moderate retention; effervescent with visible particulate from natural ingredients.

Aroma. High intensity with dominant notes of savory tomato juice, zesty lime, and a sharp, peppery prickle from chili; underlying scents of coriander and a faint, bready wheat malt are present behind the spice.

Taste. Initial impression is a sharp, refreshing tartness followed immediately by savory tomato and tangy lime juice. Medium-low saltiness enhances the vegetable flavors. Very low hop bitterness, with the finish defined by a clean lactic acidity and a building chili heat. The malt provides a soft, doughy background that prevents the acidity from becoming harsh.
