This Basque interpretation of a Belgian Tripel presents a bold, golden profile where traditional monastic complexity meets a modern, hoppy edge. The triple fermentation process yields a sophisticated bouquet of spicy phenols and citrusy esters, characteristic of the style but punctuated by an assertive, resinous hop character. Despite its 8% ABV, the beer maintains a deceptive drinkability, balancing a soft, grainy-sweet Pilsner malt backbone against a firm, lingering bitterness. The experience is defined by its high effervescence and a dry, clean finish that highlights the intersection of peppery yeast and vibrant, resinous hops, resulting in a powerful yet remarkably refreshing ale.
Appearance. Deep yellow to golden-amber (5-7 SRM). Brilliant clarity with a long-lasting, rocky white head that leaves dense, characteristic Belgian lacing on the glass.
Aroma. Moderate to high intensity featuring complex spicy phenols like black pepper and clove. Fruity esters reminiscent of lemon and orange zest are prominent, supported by a light, honey-like Pilsner malt sweetness. A distinctive resinous and floral hop character is more assertive than typical monastic examples.
Taste. Initial impressions of soft malt and citrus esters lead to a substantial spicy-fruity yeast character. Peppery phenols are well-balanced by a firm, resinous bitterness that lingers into the aftertaste. The finish is remarkably dry and crisp, lacking any cloying sweetness, with a clean, hop-forward presence.
Mouthfeel. Medium body that feels lighter due to high attenuation. Highly carbonated and effervescent on the tongue. Alcohol warmth is noticeable but smooth and well-integrated, never harsh.
