Água do Monge Saison Pitaya
This Saison presents a vibrant interpretation of the classic farmhouse ale, elevated by the addition of Pitaya and local Guarapuava grains. It showcases a delicate interplay between soft, grainy wheat and barley, providing a rustic foundation for the moderate fruity esters and peppery spice characteristic of the style. The Pitaya contributes a subtle tropical hue and a hint of exotic fruitiness that integrates seamlessly with the dry, highly attenuated finish. Thanks to the Charmat method refermentation, the carbonation is exceptionally fine and effervescent, lifting the light acidity and refreshing botanical nuances into a crisp, elegant aftertaste.
Appearance. Pale pink to light salmon hue (approximately 6-10 SRM), slightly hazy to opaque with a long-lasting, dense, rocky white head that leaves delicate Belgian lace.
Aroma. Moderate to high intensity aromatic mix of citrusy esters and spicy phenols resembling black pepper. Lightly grainy malt character from local wheat and barley is evident. Low earthy hop presence and a distinctive, subtle exotic fruit note from the Pitaya maturation.
Taste. Initial impression is dry and crisp. A soft, grainy malt palate of wheat and barley is balanced by moderate hop bitterness and a refreshing light acidity. Peppery spice and citrus esters dominate the mid-palate, complemented by a light, non-sugary fruitiness from the Pitaya. Finishes very dry with a lingering bitter and spicy aftertaste.
Mouthfeel. Light to medium-light body. Very high carbonation, exceptionally effervescent and champagne-like due to the Charmat method refermentation. No perceptible alcohol warmth. Clean and crisp without astringency.
