Against The Grain Brewery

This assertive Double IPA showcases a vibrant citrus-forward profile driven by an intensive use of Citra and Centennial hops. The sensory experience begins with a rush of grapefruit, lime zest, and tropical mango, supported by a sturdy but clean backbone of Pale, Vienna, and Munich malts, with a touch of wheat for a soft texture. It presents a sticky resinous quality on the palate, where the hop intensity is balanced by a dry, lingering bitterness from Columbus. Clean fermentation and a subtle warmth highlight its strength without sacrificing drinkability, making for a bold, hop-focused experience that emphasizes bright, punchy aromatics and a crisp finish.

Appearance. Deep gold to light copper (approx. 9 SRM) with good clarity. It supports a moderate-sized, persistent, off-white head that leaves sticky lacing as it recedes.

Aroma. Intense hop aromatics dominate, featuring punchy grapefruit, passion fruit, and lime zest, complemented by floral and resinous pine. A low, supportive malt sweetness offers hints of toasted bread and honey in the background, with a clean fermentation profile and smooth, subtle alcohol.

Taste. Strong hop flavors of citrus pith, tangerine, and tropical stone fruit lead the palate. A firm, assertive bitterness provides a sharp counterpoint to the subtle, bready sweetness of the malt base. The mid-palate is slightly resinous, finishing dry with a long, clean, and bracingly bitter aftertaste.

Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is medium-high, providing a lively prickle that lightens the palate. A well-integrated, gentle alcohol warmth is present, devoid of any harshness or astringency.

This is a very hop forward American style IPA. Brewed with Pale, Vienna, Munich and wheat malt for a solid base for all American hops, focusing mainly on the variety “Citra.” Citra hops are a relatively new variety introduced in 2008. It was bred as a hybrid of a number of different hops, including Hallertauer Mittelfrüh, U.S. Tettnanger, East Kent Golding, Bavarian, Brewers Gold, and other unknown hops.

The resulting hop, Citra, has a distinct citrusy and tropical fruit flavor and aroma. In Citra ass down we used American Columbus for bittering and 11# of Citra at the end of the boil for late kettle addition flavor and aroma. Then we added 6 more pounds Citra and 5# Centennial post fermention for aroma. Rebrewed for your tasting pleasure!
