Against The Grain Brown Note
Against The Grain’s Brown Note is a soulful interpretation of a British Brown Ale, enriched with a foundation of traditional British malts. The aroma opens with layers of sweet toffee, biscuit, and a dusting of chocolate. On the palate, a complex malt bill delivers rich notes of caramel and toasted nuts, while the addition of oats provides a smooth, velvety texture. Though anchored by earthy British hops, a late addition of Cascade introduces a subtle, bright floral counterpoint. This balanced ale finishes with a gentle, lingering roast and a medium-dry snap, offering a sophisticated take on a classic style.
Appearance. Deep mahogany to dark reddish-brown (18–22 SRM) with excellent clarity. It is topped by a moderate, creamy, light tan head that shows good retention and leaves delicate lacing.
Aroma. Moderate intensity featuring a complex malt-forward profile of toffee, toasted biscuit, and light milk chocolate. A distinct caramel sweetness is present, complemented by a low earthy hop character and a faint whisper of floral citrus. Fermentation esters are very low and clean.
Taste. Initial impression is of gentle malt sweetness, unfolding into flavors of nutty toffee, caramelized sugar, and a hint of dark chocolate. A firm biscuity backbone persists throughout. Hop bitterness is medium-low, providing balance against the specialty malts. A low earthy and slightly floral hop flavor leads into a medium-dry, clean finish with a lingering toasted character.
Mouthfeel. Medium body with a notable smoothness and slight creaminess derived from the inclusion of oats. Carbonation is moderate to medium-high, providing a lively mouth-filling quality without astringency or alcohol warmth.

The hops are mostly traditional, earthy British hops, but we cocked it up a bit with some Cascade late in the boil just to show those snooty Brits that we don’t approve of that Constitutional Monarchy crap.
