Against the Grain’s Bo & Luke is a towering Imperial Stout that commands attention with its complex interplay of wood, smoke, and spirit. This collaboration with Brouwerij de Molen pours an opaque, midnight black with a dense, mocha-colored head. The aroma is a decadent tapestry of dark chocolate, campfire smoke, and rich Kentucky Bourbon barrels, yielding notes of toasted oak and vanilla. On the palate, a base of roasted malts and spicy rye provides a sturdy foundation for flavors of molasses, espresso, and charred wood. A smooth, warming finish reflects the 13% ABV, masterfully integrating the bourbon-inspired ingredients into a velvety, full-bodied experience.
Appearance. Jet black and completely opaque (40+ SRM). A dense, creamy, deep tan to dark brown head shows moderate retention. High viscosity is apparent through prominent legs on the glass.
Aroma. High intensity aroma featuring a blend of bittersweet chocolate, espresso, and heavy campfire smoke. Significant bourbon barrel influence provides layers of vanilla, toasted oak, and caramel. Low esters of raisins and prunes are present, alongside a clean but powerful alcohol warmth.
Taste. Initial impression of intense roasted malt and smoky char. Flavors of dark cocoa and black licorice meld with spicy rye and sweet corn notes.
