35K is a decadent Sweet Stout that pushes the boundaries of its style with an elevated ABV and intense flavor profile. Pitch black and viscous, it pours with a dense, creamy tan head. The sensory journey begins with an assertive aroma of bittersweet cocoa and freshly roasted coffee, underpinned by the earthy, floral nuances of English Kent Goldings hops. On the palate, a lush, full-bodied texture unfolds, driven by a generous addition of lactose. This unfermentable milk sugar provides a velvety sweetness that perfectly balances the rich, complex dark roasted malt character. Notes of dark chocolate and sweetened espresso linger in a long, satisfying finish that remains remarkably smooth.

Appearance. Pitch black (40+ SRM) and opaque. Pours with a thick, persistent, creamy tan to mocha-colored head that leaves significant lacing on the glass.

Aroma. High intensity. Dominant aromas of dark chocolate, bittersweet cocoa, and roasted coffee. Medium-low earthy and floral notes from English Kent Goldings hops. Subtle dark fruit esters like plum. A distinct impression of cream-like sweetness from the lactose. No diacetyl.

Taste. Initial impression is rich and sweet. Deeply layered dark roasted malt flavors of cocoa and espresso dominate the palate. English Kent Goldings hops provide a moderate bitterness that prevents the beer from becoming cloying. The lactose contributes a silky, milky sweetness that rounds out the roasted edges. The finish is long and balanced-sweet with lingering notes of mocha and a subtle, clean alcoholic warmth.

Mouthfeel. Full-bodied and exceptionally creamy with a viscous, coating texture. Carbonation is moderate. Noticeable but well-integrated alcohol warmth. Low astringency despite the heavy roast.
