This elegant Saison showcases a sophisticated transformation through a year of maturation in Zinfandel and gin oak barrels. The rustic, grainy base of a traditional farmhouse ale provides a canvas for complex layers of botanical juniper and herbal gin notes, seamlessly interwoven with the vinous character of dark red fruits like blackberry and plum from the wine wood. Peppery phenols from the Saison yeast dance alongside a structural oak woodiness. Effervescent and impeccably dry, it balances a soft malt character against a tannic, drying finish, offering a nuanced sensory journey that marries Belgian tradition with refined barrel character.

Appearance. Deep gold to copper-amber with a slight pinkish-orange tint from the Zinfandel barrels; hazy appearance with a tall, dense, rocky ivory head that exhibits excellent persistence and Belgian lacing.
