This elegant Saison presents a rustic, farmhouse-driven profile shaped by the delicate addition of spent black raspberries and cherries. The fruit provides a nuanced tartness and earthy berry notes rather than overt sweetness, harmonizing with the spicy, peppery fermentation character. Blending with Noble: Oak Aged components introduces a refined structure of soft tannins and a hint of weathered wood. The base offers a grainy, cracker-like malt backbone that remains remarkably dry. With high carbonation and a crisp, effervescent mouthfeel, it finishes with a lingering floral quality and a touch of tart fruit skin.
Appearance. Luminous pale ruby with a hazy, pinkish-orange glow. Topped by a dense, rocky, off-white to pale pink head that shows excellent retention and fine Belgian lacing.
Aroma. Moderate-high intensity featuring a complex blend of tart black raspberry, cherry skin, and floral hop character. The yeast contributes cracked black pepper and lemon zest, while the oak aging adds a soft earthy vanilla and dry woodiness over a light, grainy malt base.
