Citra contributes bright layers of grapefruit and lime, while Simcoe adds a grounding touch of pine and earth, and Strata rounds out the profile with notes of passionfruit and a hint of dank resin. Fermentation in a wine barrel introduces a subtle vinous character and light wood tannins, which harmonize with the characteristic peppery yeast phenols. Appearance.Pours a hazy, pale gold (approximately 4 SRM) with a dense, rocky white head that demonstrates excellent retention and leaves thick Belgian lace. Effervescent with visible carbonation rising through a slightly opaque body.
