This Experimental Mead presents a luxurious sensory tapestry, defined by the pungent, herbal character of Heather honey and a lengthy maturation in ex-bourbon barrels from the Penderyn Distillery. The profile opens with deep, musky honey aromas intertwined with charred oak, rich vanilla, and a distinct Welsh whisky warmth. On the palate, the intense, earthy sweetness of the Heather honey is countered by structured wood tannins and smooth spirituous notes. The 15.9% ABV provides a significant but well-integrated warmth, enhancing the velvety, sack-strength texture. It concludes with a complex finish of lingering honey, vanilla, and a hint of smoke.
Appearance. Deep gold to amber (12-16 SRM). Brilliant clarity with a heavy, viscous pour and prominent legs. No foam or carbonation, typical of a still mead.
Aroma. High intensity. Primary notes of floral, slightly musky heather honey and dried herbs. Strong secondary aromas of toasted oak, bourbon-soaked vanilla, and caramel. Distinguishable whisky spirit presence remains clean and integrated without harsh fusel oils.
Taste. Bold heather honey richness with earthy and herbal undertones. The mid-palate introduces sweet vanilla and coconut from the ex-bourbon oak. High sweetness is balanced by drying oak tannins and a warming whisky finish. No hop bitterness; honey-derived phenolics provide a subtle herbal counterpoint.
Mouthfeel. Full, syrupy body with high viscosity. Extremely smooth texture. Significant alcohol warmth that provides a glowing, comfortable sensation rather than a sharp burn. No carbonation (still).
