This Specialty Cider/Perry presents a kaleidoscope of orchard and forest flavors, driven by a wild-fermented blend of apple and pear. The aromatic profile is immediately striking, leading with the delicate, honeyed floral notes of elderflower before unfolding into a complex berry medley of raspberries, blueberries, and tart cherries. Quince and grapes provide a structured, vinous backbone that balances the bright, zesty acidity of the base cider. On the palate, the interplay of tannins and sharp fruit acids creates a vibrant, multi-layered experience, finishing bone-dry with a lingering essence of wild fruit skins and a hint of farmhouse funk characteristic of the wild fermentation process.

Appearance. Deep sunset pink to coral hue (SRM 10-15 equivalent), hazy with visible sedimentation. Effervescent with a fast-dissipating, fizzy white head; no lacing.

Aroma. High intensity. A vibrant bouquet of floral elderflower and fresh-pressed apples. Distinct tart berry notes of raspberry and cherry are supported by a vinous grape character and the earthy, aromatic perfume of quince. Subtle wild yeast phenols suggest a light leathery or spicy complexity.

Taste. Initial impression is sharply acidic and refreshing. A complex fruit profile features crisp apple, earthy quince, and juicy raspberry. The mid-palate reveals tannins from grape skins and blueberries. Zero hop bitterness. The finish is bone-dry and exceptionally clean, with a lingering tartness and a floral, elderflower-driven aftertaste.

Mouthfeel. Light to medium-light body with high, prickly carbonation. Significant acidity creates a sharp, bright sensation on the tongue. Light tannin-driven astringency from fruit skins; very low alcohol warmth.
