Æblerov Prendila Così 2019 is a rustic, wild-fermented Cider with Other Fruit that captures a vibrant dialogue between Danish orchards and vineyards. The sensory journey begins with the sharp, acidic bite of Holsteiner Cox and Rod Aroma apples, layered with the complex, earthy funk of spontaneous fermentation. Maceration with Danish Rondo grapes adds a sophisticated vinous dimension, contributing dark berry undertones and a firm tannic structure. This bone-dry cider finishes with a lingering, puckering tartness, showcasing a raw and unmanipulated profile where the character of the fruit and the wild yeast are allowed to shine.

Appearance. Luminous deep rose to light ruby hue (SRM 10-15); minimal, fleeting pink-tinted head that dissipates rapidly; slight natural haze consistent with a wild, unfiltered cider.

Aroma. High intensity with a bold, wild-fermented character. Earthy barnyard funk, wet hay, and leather are prominent. Distinctive tart apple notes provide a bright acidic backdrop, while the Rondo grapes contribute subtle dark fruit skin and vinous notes.

Taste. Initial impression is bracingly tart with sharp malic acidity. Mid-palate reveals complex layers of funk and spice from the wild fermentation. The Rondo grapes provide a savory, vinous quality and a structural tannin that balances the acidity. Bone-dry on the palate with a clean, puckering finish. Aftertaste lingers with notes of dried apple skins and grape must.

Mouthfeel. Medium-light body with a refreshing, prickly carbonation. Noticeable but well-integrated alcohol warmth. Moderate tannin-driven astringency from grape skins provides a structured, drying mouthfeel without being harsh.

Notre avis: Æblerov est un duo: l'importateur et caviste Christopher Melin et Morten Sylvest-Noer étaient alors sommeliers et révaient de devenir vignerons. Pas si simple au Danemark... Ils deviendraient alors producteurs de cidre et d'autres boissons gazeuses! Æblerov signifie "vol de pommes" car c'est ainsi qu'ils ont débuté... En 2014, leur production officielle a débuté, sur le principe de fruits bio, aucun intrant. Des cidres et vins pétillants de fruits "sauvages", racés et purs, vineux, même, qui se destinent à la gastronomie. Prendila Cosi est issu de 90% de pommes (assemblage "Arôme Rouge " et Holstein cox) et 10% de raisins rouges regent et rondo du Danemark. Encore un "cidre" explosif, intense. A découvrir!
