The aromatic profile is dominated by the fragrance of red vineyard peaches and tart raspberries, underpinned by the crisp, tannic structure of Rød Aroma, Topaz, and Pigeon apples. This hybrid offers a vibrant acidity and a dry, vinous finish reminiscent of a sparkling rosé. The second maceration of red vineyard peaches provides a deep stone fruit complexity that harmonizes with the bright berry notes, resulting in a sophisticated, effervescent profile that is both rustic and refined, displaying exquisite balance between fruit and fermentation.
Appearance. Deep salmon to pinkish-orange (6–9 SRM) with slight haze from fruit maceration; moderate effervescence produces a brief white-to-pink head that recedes to a fine collar.
