Æblerov Paloma 2020 is a vibrant, wild-fermented Specialty Cider that artfully bridges the gap between orchard and vineyard. The expressive aroma leads with the floral perfume of elderflower, layered over the rustic funk of spontaneous fermentation. On the palate, crisp Danish organic apples provide a bright acidic foundation, while the inclusion of Rondo, Cabernet Sauvignon, and Merlot grapes contributes a vinous complexity and subtle tannic structure. This hybrid displays a sophisticated interplay of tart pomme fruit and dark berry nuances, finishing bone-dry with a lingering botanical elegance. Appearance. Pours a hazy, pale ruby-tinted pink (6–12 SRM). Effervescence is minimal, forming a fleeting white collar that dissipates quickly, leaving light sediment and visible turbidity in the glass.
Aroma. High intensity. A bouquet of fresh elderflower provides a floral high note, followed by the rustic, earthy funk of wild fermentation. Sharp, green apple tartness is bolstered by vinous aromas of crushed red grapes and a hint of spicy skin character.
Taste. The palate is dominated by a sharp acidity and the crisp profile of organic apples. Mid-palate, the grape hybrid emerges with flavors of tart blackberry and red currant, complemented by a delicate botanical elderflower note.
