The five-week maceration on Solaris grapes provides a sophisticated vinous backbone, while the addition of Portuguese pear quince adds aromatic depth. A secondary maceration with Nelson Sauvin hops introduces distinct gooseberry and white wine notes, playfully bordering on the pungent thiols often associated with the variety. Wild fermentation lends a rustic, earthy funk that ties the floral elderflower and tropical pineapple cues together, finishing bone-dry with a lingering, wine-like elegance and nuanced tartness.
Appearance. Deep gold to pale amber (6–8 SRM). Generally clear to brilliant, though a slight haze may persist from the grape and hop maceration. Very low head retention with quickly dissipating effervescence.
Aroma. High intensity and profoundly complex. Immediate notes of elderflower and muscat-like Solaris grapes are punctuated by the distinct white wine and crushed gooseberry character of Nelson Sauvin hops.
