This Experimental Specialty Cider presents a sophisticated tapestry of wild fermented organic apple cider layered with the deep, molasses-driven soul of Guatemalan rum barrels. The wild fermentation imparts a complex funk that dances alongside the refined acidity of organic Chardonnay, while a curated blend of herbs and spices provides a festive, mulled warmth. At a potent 17% ABV, the sensory experience is dominated by rich caramelized sugar and stewed orchard fruit, refined by the toasted oak of Phantom Spirits barrels. Intended for warm service, its aromatic profile expands into a heady bouquet of botanical spice and spirited depth.

Appearance. Deep amber to tawny gold (12-18 SRM). Still to very low carbonation with no head formation. Brilliant clarity despite the complex ingredient list.

Aroma. High intensity. Heady aromas of dark rum, vanilla, and oak-derived tannins mingle with the sharp, acidic tang of wild fermented apples. Background notes of buttery Chardonnay and a complex botanical spice rack including cinnamon and clove. Noticeable but smooth alcohol presence.

Taste. Initial impression is a powerful, warming sweetness followed by intense tart apple and wine acidity. Rich flavors of molasses and oak from the Guatemalan rum barrels provide a sturdy backbone. The finish is long and complex, featuring lingering herbal spice, dried fruit esters, and a clean vinous character from the Chardonnay. No hop bitterness present.

Mouthfeel. Full-bodied and viscous with a heavy weight on the palate. Low to no carbonation. Significant, soothing alcohol warmth that becomes more pronounced when served hot. Velvety texture with light tannic astringency from wood aging.
