This collaboration with Pastore Brewing reimagines a classic Pavlova as a vibrant Wild Specialty Beer. It delivers an intense tropical bouquet led by sharp passion fruit and lush mango, softened by the delicate, jammy sweetness of strawberry. The addition of vanilla creates a creamy, dessert-like bridge between the punchy lactic acidity and the fruit medley. Hints of wild fermentation provide a subtle complexity beneath the fruit-forward profile. It captures the essence of a meringue-based treat, balancing zesty tartness with a rounded, floral finish that remains refreshing despite its decadent, pastry-inspired origins.

Appearance. A striking deep orange with a hazy, sunset-pink glow from the heavy fruit additions. The pour produces a brief, light pink-tinged head with minimal retention and sparse lacing, typical for high-fruit acidity.

Aroma. High intensity aromatics of freshly sliced passion fruit and sun-ripened mango dominate, followed by a softer, jammy strawberry note. A distinct, aromatic vanilla bean sweetness weaves through the fruit, accompanied by a clean, sharp lactic tartness and a very low, earthy wild yeast funk.

Taste. An immediate, puckering punch of passion fruit acidity is quickly balanced by the fleshy sweetness of mango and strawberry puree. The malt is a mere backdrop of toasted cracker. Vanilla provides a smooth, marshmallow-like mid-palate, rounding off the sharp edges. The finish is long and fruity with a lingering tartness and a touch of vanilla creaminess.

Mouthfeel. Medium-full body with a notable silken creaminess from the vanilla and fruit solids. Carbonation is moderate, providing enough lift to prevent the beer from feeling heavy. A light, pleasant astringency from fruit skins is present, with very low alcohol warmth.
