This vibrant Double IPA showcases a potent marriage of Mosaic and Waimea hops, delivering an intense sensory experience defined by freshly crushed blackberries and sharp piney citrus. The aroma is dominated by these New World characteristics, supported by a clean, unobtrusive malt base that allows the hop profile to shine. On the palate, a powerful alpha bitterness provides a firm structure, balanced by a hint of tropical fruit and a dry, lingering finish. At 7.8% ABV, it offers a well-integrated warmth and a medium body, exemplifying the style's goal of high drinkability despite its significant hop intensity and strength.
Appearance. Pale gold to light copper (7 SRM) with good clarity. Features a moderate-sized, persistent, off-white head with fine lacing.
Aroma. High intensity hop aroma featuring distinct notes of crushed blackberry and ripe blueberry from the Mosaic additions, alongside sharp citrus and resinous pine from the Waimea. Background malt is neutral and grainy. Clean fermentation profile with a very subtle, smooth alcohol presence.
Taste. Initial impression is a burst of citrus peel and dark berry fruit. Malt flavor is low, providing a soft, bready foundation. Firm, high bitterness that remains clean without harshness. The finish is dry and crisp, with a long-lingering aftertaste of pine resin and citrus zest.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is medium-high, providing a lively mouth-feel. Restrained, gentle alcohol warmth is present but well-integrated. No hop-derived astringency.
