Abysmo Apolo is a commanding American Stout that pours a deep, midnight black, living up to its namesake as a brew of power and knowledge. The sensory profile is dominated by an intense orchestration of roasted barley, yielding clear and evocative notes of dark chocolate and freshly pulled espresso. At 7.2% ABV, the beer presents a noticeable but smoothly integrated warmth that supports a robust, medium-full body. An assertive bitterness balances the dark malt character, leading into a dry, complex finish where charred grain and resinous hop cues linger long after the last sip.
Appearance. Jet black and opaque (SRM 40+). It features a large, persistent light-tan head with excellent retention and thick lacing.
Aroma. High intensity of roasted malt, presenting strong dark chocolate and roasted coffee bean notes. Medium-low resinous hop aroma is present. Clean fermentation profile with very low fruity esters and a subtle, smooth alcohol presence.
Taste. Initial flavors of bittersweet chocolate and coffee grounds are prominent, backed by a low malt sweetness. High bitterness from both roasted grains and hops. Moderate hop flavor with a resinous, citrusy edge. The finish is dry and lingering with a pleasant, lightly burnt grain character that remains smooth and avoids being acrid.
Mouthfeel. Medium-full body with a distinct creaminess. Medium-high carbonation. Noticeable but smooth alcohol warmth. Very low roast-derived astringency that adds to the dry finish without being harsh.
