This Belgian Dark Strong Ale, aged for over two years, presents a sophisticated and multifaceted profile. The foundation of rich Belgian malts and caramelized candy sugar creates a deep, bready-toasty core. Significant maturation has integrated the high alcohol into a smooth, warming glow reminiscent of fine liqueur. Vibrant notes of dark raisins and toasted nuts are heightened by the addition of black cherries, which contribute a layer of sweet stone fruit complexity. The Trappist yeast lends subtle spicy phenols, balancing the dense, decadent fruitiness for a finish that remains surprisingly structured and dry despite its 11% strength.

Appearance. Deep coppery-brown with garnet highlights (18–22 SRM). It supports a huge, dense, and persistent light-tan head with excellent lacing. Generally clear, though it may show a slight haze from the long aging process.

Aroma. High intensity with a complex mix of rich, bready-toasty malt and dark caramel notes. Prominent esters of raisins, figs, and sweet dark cherries dominate, supported by low spicy phenols like vanilla and black pepper. A soft, perfumy, and rose-like alcohol presence is noticeable, while hop aroma is absent.

Taste. Rich and complex maltiness with flavors of toasted bread and caramelized sugar. Intense dark fruit esters of prune and dried cherry are complemented by the specific sweet depth of black cherries. Bitterness is medium-low, allowing the malt and alcohol to lead. The finish is moderately dry and smooth, featuring lingering notes of nuts, dark fruit, and a vinous, aged character.

Mouthfeel. Medium-full body with a creamy, luxurious texture. High carbonation provides a lively lift that prevents a heavy or syrupy sensation. A smooth but significant alcohol warmth is evident throughout.
