The foundation is built upon 100% UK ingredients, featuring a bready and lightly biscuity malt backbone. This heritage base is elevated by a purposeful dry hopping of Pilgrim and UK Cascade, which introduces layers of spicy cedar, delicate floral notes, and a nuanced, earthy citrus brightness. The balance leans toward a clean, thirst-quenching bitterness that defines the classic Sheffield pint. Expect a nuanced interplay between traditional English malt character and the more vibrant, resinous hop finish provided by the dry-hop addition, culminating in a dry and exceptionally drinkable experience.
Appearance. Pours a clear, light copper to amber color (SRM 10-12) with a moderate, off-white head that exhibits fair retention and leaves light lacing on the glass.
Aroma. Moderate intensity featuring a biscuity and bready malt character with hints of toasted crust. The hop aroma is prominent for the style due to dry-hopping, displaying earthy, spicy Pilgrim notes alongside a subtle floral and grapefruit-rind character from the UK Cascade. Low fruity esters of red apple are present.
Taste. Initial impression is of clean, bready malt followed quickly by a medium-high hop bitterness.
