Abbeydale Ryes Again is a masterfully complex Wild Specialty Beer, showcasing the deep integration of a four-year barrel program. The sensory experience is led by a sophisticated balsamic-esque sourness, layered with vibrant, fleshy notes of cherries and raspberries. Blackcurrants provide a deep, vinous undertone, while the addition of coffee husks introduces a unique spicy complexity. Long-term aging in oak barrels contributes elegant notes of marzipan and creamy vanillin, rounding out the sharp acidity. The finish is remarkably dry and spicy, reflecting a harmonious blend of wild fermentation and fruit tannins that create a lingering, multi-faceted sensory profile.

Appearance. Deep garnet to ruby red with a slight haze. A thin, pinkish-white head forms but recedes quickly, leaving minimal lacing.

Aroma. High intensity aromatics of tart cherry and ripe raspberry, intertwined with a pungent, balsamic-like acetic acidity and earthy funk. Subtle notes of marzipan and vanilla bean emerge from the oak, alongside an unusual spicy, dried-fruit scent from the coffee husks.

Taste. Aggressively sour but complex, featuring layers of tart cherry, blackcurrant, and red berry. The acidity is sharp and vinegary in a refined way, balanced by woody tannins and a hint of almond-like marzipan. Hop bitterness is negligible. The finish is exceptionally dry, with a lingering spicy tingle and a touch of oak vanillin.

Mouthfeel. Medium-light body with high, prickly carbonation. Notable astringency from the fruit skins and oak tannins. A slight, pleasant warmth is present, though the mouthfeel remains crisp and refreshing.
