This Belgian Tripel presents a sophisticated balance between high-strength potency and delicate drinkability. The expressive yeast profile drives the sensory experience, offering nuanced layers of peach, apricot, and plum that intertwine with traditional peppery phenols. A foundation of soft, grainy malt provides a rich opening before yielding to the elegant, herbaceous, and spicy character of imported European hops. Despite its significant 9.2% ABV, the beer remains light-bodied and highly effervescent, culminating in a crisp, remarkably dry finish. It serves as a complex tribute to monastic brewing traditions, masking its strength behind a seamless chorus of fruity and spicy harmonies.
Appearance. Deep yellow to pale amber in color with good clarity. Features a long-lasting, creamy, and rocky white head that leaves characteristic Belgian lace as it slowly fades. Highly effervescent with visible carbonation streams.
Aroma. Moderate to high intensity. Dominated by fruity esters reminiscent of peach, apricot, and plum, complemented by a complex spicy phenol character of clove and pepper. A low but distinct herbaceous and spicy hop aroma from European varieties balances the soft, grainy-sweet malt background. Clean, well-integrated alcohol notes.
Taste. Initial soft, grainy-sweet malt transitions into a complex mid-palate of stone fruits and peppery spice. Hop bitterness is moderate to firm, providing essential balance to the malt and esters. The herbaceous and spicy hop flavors are well-defined. Finishes crisp and very dry with a lingering spicy-fruity yeast character and no harshness.
Mouthfeel. Medium-light body, appearing lighter than the high gravity suggests. High carbonation produces an effervescent, prickly sensation on the tongue. Alcohol warmth is noticeable and pleasant but never hot or solventy. Smooth texture without being heavy.
