This vibrant ale presents a complex interplay of delicate floral aromas and a distinct vegetal earthiness that mirrors its coastal terroir. The fermentation profile remains characteristically dry and effervescent, allowing the botanical additions to shine alongside classic peppery phenols. A light grainy malt backbone provides just enough support for the spicy hop presence and unique island botanicals, resulting in a refreshing, sun-drenched profile that is both rustic and elegantly perfumed.
Appearance. Pale gold to deep yellow (5–8 SRM) with a tall, dense, persistent white head that leaves intricate lacing. Clarity is generally brilliant with a gentle effervescent shimmer.
Aroma. Moderate to high intensity featuring a complex bouquet of dried wild herbs and floral notes. Peppery yeast phenols are prominent, complemented by low pome fruit esters and a subtle, grainy-sweet malt character. Hop aroma is low and earthy.
