This interpretation of a Berliner Weisse pushes the boundaries of the style with a vibrant, smoothie-like profile. A sharp lactic sourness provides the foundation for an explosion of jammy blackberry and stone-fruit apricot notes. The addition of vanilla and marshmallow creates a confectionery-like sweetness that rounds out the acidic bite, reminiscent of a fruit-laden dessert. While the base is rooted in a traditional wheat-centric sour ale, the 6.2% ABV and dense fruit purée result in a much fuller, more indulgent sensory experience than a standard example, finishing with a lingering, creamy berry sweetness and a soft, pillowy texture.
