This refreshing Witbier is a session-strength tribute to summer, pouring an exceptionally pale, nearly white hue with a thick, persistent head. The foundation of equal parts Pilsner malt and wheat malt delivers a rounded, bready sweetness and a smooth, approachable profile. While the Noble hops provide a clean, understated bitterness, a late addition of American hops introduces vibrant aromatic layers. Uniquely, a Munich yeast strain drives the sensory experience, contributing a distinctive aroma of ripe banana. The result is a highly carbonated, crisp, and delicate wheat ale that balances traditional structure with bright, expressive fermentation notes.
Appearance. Very pale straw to a milky, whitish-yellow (2–3 SRM). Highly hazy with a characteristic starch-driven cloudiness. Features a thick, dense, and exceptionally persistent white moussy head with fine lacing.
Aroma. Moderate intensity featuring bready and grainy wheat notes. A prominent ripe banana ester from the Munich yeast defines the profile, supported by soft floral Noble hop notes and a subtle, bright citrus lift from the American hop additions. Very low honey-like sweetness from the Pilsner malt foundations.
Taste. Initial impression of soft, grainy wheat and rounded Pilsner malt sweetness. Flavors of ripe banana and light citrus zest lead the mid-palate. Hop bitterness is low and clean, derived from Noble varieties, providing balance without lingering. The finish is crisp, refreshing, and relatively dry with a clean, short malt aftertaste.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the high wheat content. High carbonation provides a lively, effervescent sting. No alcohol warmth is detected at 3% ABV. Completely free of harshness or astringency.
