This Imperial Wild Specialty Beer delivers an explosion of jammy fruit and smooth confectionery notes. Confiture De Gelato balances the sharp, tannic tang of cassis with the lush, tropical sweetness of mango and sun-ripened peach. Despite the absence of lactose, a massive addition of vanilla beans creates a creamy, gelato-like aromatic profile that rounds out the significant warmth of the 10% ABV. The wild fermentation provides a structured acidity that keeps the 250 grams per liter of fruit from becoming cloying. It is a decadent, high-intensity experience where tart berry skins meet velvet-smooth stone fruit and aromatic vanilla.
Appearance. Deep, opaque magenta to dark purple hue with a thick, persistent pink foam head; significant fruit solids contribute to a viscous, heavy-bodied appearance with notable lacing.
Aroma. High intensity aromatics of tart blackcurrant, juicy mango, and aromatic peach skin; a strong, creamy vanilla bean presence provides a dessert-like character, underpinned by sharp lactic acidity and a faint hint of funky fermentation esters.
Taste. An immediate punch of tart cassis is balanced by the fleshy sweetness of mango and peach; vanilla provides a smooth, sweet-tasting bridge between the high acidity and the alcohol warmth. Low hop bitterness allows fruit tannins and sharp wild acidity to dominate the finish, which is long, jammy, and slightly warming.
Mouthfeel. Full body exhibiting a thick, smoothie-like texture from the high fruit concentration; moderate carbonation provides a lift to the heavy palate. Noticeable but well-integrated alcohol warmth without harshness.
