This 2015 vintage Wild Specialty Beer showcases the distinctive character of New Zealand feijoas matured through extended barrel aging. The sensory profile is headlined by the intense, tropical perfume of the fruit—evoking guava, pineapple, and a hint of mint—tightly woven with the rustic funk of Brettanomyces. Aging in wine barrels contributes a sophisticated vinous structure, adding layers of toasted oak and soft tannins that complement the sharp lactic acidity. On the palate, the beer is strikingly dry and effervescent, balancing the musk-like fruit esters with a clean, tart finish that lingers with notes of white grape and aged wood.

Appearance. Deep gold to pale amber (7–10 SRM) with a slight, persistent haze. The off-white head consists of fine bubbles with moderate to low retention, typical of acidic wild ales, leaving light lacing.

Aroma. High intensity featuring a complex blend of tropical feijoa—reminiscent of pineapple and guava—and 'horse blanket' funk. Complementary notes of lemon zest, damp earth, and white wine vinegar are present, supported by a faint cracker-like malt and subtle oak vanillins from the wine barrels.

Taste. Initial impression is sharply acidic and fruit-forward with tart feijoa and citrus. Malt flavor is very low, serving only as a neutral base for the complex fermentation character. Hop bitterness is negligible, as balance is achieved through high acidity and woody tannins. The finish is bone-dry and clean, with a lingering vinous quality and tropical fruit musk.

Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. A mild, pleasant astringency from the fruit skins and barrel wood provides structure. Alcohol warmth is very low and well-integrated.
