This Imperial Gueuze-style blend presents an elevated sensory profile, marrying eight, six, and four-year-old spontaneously fermented barrels. The aroma is a profound tapestry of barnyard funk, horse blanket, and aged leather, accented by sharp lemon rind and dried pome fruit. Extended maturation introduces sophisticated Sherry-like notes of walnuts and subtle oxidation, reflecting its unique library of aged barrels. On the palate, a vibrant, puckering acidity provides structure against a backdrop of light, grainy malt and earthy hay. The higher alcohol content lends a gentle warmth that integrates with the woody oak tannins. It concludes with a bone-dry, lingering finish of tart citrus and funky complexity.
Appearance. Deep golden color (SRM 6) with brilliant clarity. Features a thick, rocky, mousse-like white head with exceptional retention and fine, persistent effervescent bubbles.
Aroma. High intensity; complex funk including notes of horse blanket, leather, and damp hay. Moderately high lactic sourness is balanced by dried apple, lemon zest, and a distinct Sherry-like oxidative nuttiness. Supportive light oak and vanilla are present.
Taste. Initial impression is sharp, clean acidity followed by complex funkiness and earthy depth. Minimal grainy malt sweetness. Flavors of rhubarb and citrus pith lead into a sophisticated oak-derived vanilla and aged Sherry character. Bitterness is nearly absent; the finish is bone-dry and lingeringly tart.
Mouthfeel. Medium-light body with high carbonation that creates a prickly, lively sensation. Noticeable but well-integrated alcohol warmth given the strength. Moderate puckering tartness without harsh astringency; possesses a soft, velvety texture.
