This modern West Coast IPA presents a vibrant evolution of the style, centered on a lean, dry-finishing malt base. The sensory experience is dominated by an intense, layered hop profile. Azacca and Vic Secret provide a lush tropical foundation of pineapple and passionfruit, while a heavy addition of Cryo Simcoe injects a sharp, resinous punch of pine and bright citrus. The aroma is highly aromatic and clean, leading into a crisp palate where firm bitterness balances a light, grainy sweetness. It finishes exceptionally clean and snappy, making this a refreshing yet complex interpretation of the classic American IPA.
Appearance. Medium gold (approx. 7 SRM) with brilliant clarity. Features a medium-sized, persistent white head with excellent lacing.
Aroma. High intensity hop aroma featuring tropical fruit notes of mango and pineapple, alongside sharp resinous pine and grapefruit zest. Supported by a low, clean, grainy-sweet malt character and a neutral fermentation profile.
Taste. Vibrant hop flavors of passionfruit, citrus, and woodsy pine dominate. A low, crackery malt presence provides a neutral foundation for the medium-high bitterness. The balance is firmly hop-forward, leading to a very dry, crisp finish with a lingering hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate to high carbonation provides a refreshing, prickly bite. Very light, well-integrated alcohol warmth with no astringency.
