The Don is a complex Wild Specialty Beer that bridges the gap between a high-gravity Double IPA and a fruited sour. A vibrant mélange of strawberry and raspberry provides a red-berry core, while guava and passion fruit introduce a tropical, tangy edge. The hop profile is aggressive yet integrated, featuring the citrus and tropical notes of Citra and Mosaic, alongside the unique zesty, grassy character of Comet. This 9.5% ABV powerhouse balances a sharp lactic acidity against a residual malt backbone, finishing with a lingering tartness and a warming glow that underscores its potency and depth.

Appearance. Deep gold to a distinct reddish-pink hue; moderate to low head retention with a light pinkish-white foam; slight haze is present from the high hopping rate and fruit additions.

Aroma. High intensity with upfront lactic sourness intertwined with a massive tropical bouquet. Citra and Mosaic hops contribute pungent grapefruit and mango, while Comet adds a wild, citrus-zest quality. Distinctive aromas of fresh strawberry and tart raspberry are prominent, supported by the floral, musky sweetness of guava and passion fruit.

Taste. A bold, sour entry with immediate impact from strawberry and tangy raspberry. The middle palate is dominated by guava and passion fruit, blending seamlessly with hop flavors of pineapple and citrus. Comet hops provide a subtle herbal bitterness that cuts through the fruit sweetness. The finish is dry and tart with a lingering berry aftertaste; bitterness is moderate, providing structure against the acidity.
